Ricotta Lemon Cake

Servings: 6-8

Ingredients

  • 1 cup - 250 g Ricotta Cheese

  • 1/2 cup -125 g Sugar

  • 2 Eggs

  • 2 Egg Yolks

  • 1/2 cup - 125 g Potato Starch or Corn Starch

  • 1 cup - 250 g Flour 00

  • 1 tsp Vanilla Extract

  • 1 tbsp Baking Powder

  • 1 Grated Lemon Zest

  • Powder Sugar

  • 1/2 cup - 125 g Softened Butter

  1. In a bowl mix ricotta and sugar then add vanilla, lemon zest and baking powder, stir well.

  2. Add egg yolks, butter, eggs, starch and flour, mixing with a whisk.

  3. Pour mixture into a cake pan.

  4. Bake at 360°F for 30 min and let cool.

  5. Sprinkle with powder sugar and serve. Enjoy with chilled Limoncello!
