1 cup - 250 g Ricotta Cheese
1/2 cup -125 g Sugar
2 Egg Yolks
1/2 cup - 125 g Potato Starch or Corn Starch
1 cup - 250 g Flour 00
1 tsp Vanilla Extract
1 tbsp Baking Powder
1 Grated Lemon Zest
1/2 cup - 125 g Softened Butter
In a bowl mix ricotta and sugar then add vanilla, lemon zest and baking powder, stir well.
Add egg yolks, butter, eggs, starch and flour, mixing with a whisk.
Pour mixture into a cake pan.
Bake at 360°F for 30 min and let cool.
Sprinkle with powder sugar and serve. Enjoy with chilled Limoncello!
