This recipe is a delicious & simple meal for any evening!
250g Tagliatelle (Try our Filotea Spinach Fettucine)
60mL olive oil (Simpatico EVOO from Umbria)
3 oz Prosciutto, sliced (Try our Prosciutto)
1/2 cup half & half
1/4 cup Pasta Water, reserved
1/2 cup Grated Piave Cheese plus more for garnish (Try our Piave)
Salt and Freshly Ground Pepper to taste
Cook the pasta in a large pan of boiling salted water for 5 minutes or until al dente. Reserve 1/4 cup pasta water.
In a large skillet, heat olive oil on medium heat and add sliced prosciutto.
Add half & half to the pan and simmer for a few minutes.
Take pan off the heat and add grated piave cheese, drained pasta and pasta water to pan and stir vigorously until cheese is incorporated. Add more pasta water to loosen sauce as needed.
Top with more grated piave, salt & pepper to taste and serve immediately!
