1 cup Fregola cooked
½ cup Borlotti Beans cooked
6 each pitted Castelvetrano slivered
10 each pitted Dilillo Baked Black Olives slivered
Zest and Juice of 1 Large Orange
Zest of 1 lemon plus 1 TBLS Juice
1 Clove of Garlic thinly sliced
1/2 cup Dried Currents
1/4-1/2 cup sliced Basil leaf
2 Tablespoons Balsamic Glaze
Splash of Simpatico Extra Virgin Olive Oil from Umbria
Salt and Black pepper to taste
Toss first 9 ingredients in a large stainless steel bowel, mix well to combine.
Add next 2 mix well and season to taste. You may prefer to add additional EVOO or Balsamic Glaze to taste.
Serve as is or on a bed of Greens. Buon Appetito!
