U salaturi, from the Sicilian dialect, translates to "the person who spreads the salt on the fish". It refers to a traditional and now-rare profession of carefully hand-salting anchovies for curing. The name "U Salaturi" is used by an Italian company that produces anchovy products, including hand-rolled anchovy fillets and anchovy drippings called colatura.

Colatura di Alici literally means “anchovy drippings.” While the anchovies cure in salt, the drippings from that process are collected. These drippings are aged for up to three years in wooden barrels. The resulting oceanic umami bomb is deep and intense. It tastes of the sea but is not fishy. It is much more nuanced than most Asian fish sauces.
